Mamu's Famous Potato Sald

Ingredients:



Directions:

  1. Boil and slice potatoes and eggs. Combine with onions, peppers, salt, and celery seed in large bowl. Fry bacon, cut in small pieces, in a large skillet until it is crisp. Add drained bacon pieces to the other ingredients in the bowl. In the skillet, retain about a pound's worth of the bacon grease and allow it to cool slightly. 
     
  2. Make the dressing. Whisk together the 6 beaten, uncooked whole eggs, vinegar, sugar and salt. Pour this mixture into the retained and slightly cooled bacon grease. 
     
  3. Cook VERY slowly and stir constantly until well-boiled. (If the grease is too hot or you rush the cooking, you'll end up with scrambled eggs.) Remove from heat and stir in 2 cups mayonnaise or salad dressing. Pour warm over potato mixture. Serve warm immediately or cold. Flavor improves as it sets.

5-Layer Mediterranean Dip

INGREDIENTS:
  • 1 Pkg (7oz.) Hummus
  • 1/2 C Chopped Tomatoes
  • 1/4 C Chopped Cucumbers
  • 1 Pkg (4oz.) Feta Cheese, crumbled
  • 2 Tbsp. sliced black olives
DIRECTIONS:
Spread hummus onto bottom of 9-inch pie plate. Cover with layers of remaining ingredients. Serve with assorted pita chips. Refrigerate any leftovers.
